They keep recording. Every Verkada camera stores footage on its own solid-state storage, so nothing is lost during an outage. You can't view it remotely until the connection returns, at which point the camera reconnects and catches Command up on its own. Sites with unreliable service can add a cellular gateway so the dashboard stays reachable.
How long is security camera footage kept?
30 to 365 days on the camera itself, depending on the model and the retention license you choose, and clips you archive in Command are kept with no expiration. Retention doesn't shrink as you add cameras, because each camera carries its own storage.
